Yeah, the gypsum was expensive (£1 of that price was postage) but it was the quickest way to get it since I had a lot of work on and no time to go shopping. I'll edit the post to mention that it's cheaper in supermarkets and also add the Chinese term — thank you! (Oh, and the pinyin seems to be shú shí gāo fěn from a bit of Googling — does that look right?)

Re pressing, here's the exact wording in Fuchsia Dunlop's book: "As it sets, gently press the surface of the curd with a slotted spoon to firm up the mixture and allow any excess water to escape." Perhaps I was just too enthusiastic with the pressing — I thought I might have been, so I tried it again and was more gentle, but I still prefer your method of adding in the cornflour and not pressing at all :)
