I've had your Chongqing hot & sour noodles on my "to try" list for a while now — looks delicious. I've had the thicker sweet potato noodles a few times, e.g. braised pork with glass noodles/紅燒肉燉粉條 at a Dongbei restaurant and country-style sweet potato noodles/鄉村薯粉缽 at a Hunan restaurant. They seem to work well in heartier dishes.
