Ooh, I hadn't actually thought of XO sauce as a type of chilli oil before, but yes, that makes a lot of sense.

I remember your mention of the LKK Chiu Chow chilli oil from Su-Lin's post on crispy prawn chilli! I've been doing a bit of research into Chiuchow cuisine recently, and was wondering if there are any restaurants in London that do it.
