Steamed fish is the third best kind, after raw and smoked. Why anyone would want to do anything else with a fish is beyond me. :)
I seem to recall that fish cheeks come away quite readily with the application of a spoon; this may vary between species, though, or maybe I'm just misremembering. It does definitely have a different texture to the main body - smoother and slicker - which is not to say that I necessarily think it's better, but I'll fight over it anyway. ;)
