Not just in central China but in many places all over China, in fact! Up here in N/E China, for example, we have 新疆大串 (sometimes called 维吾尔大串) stalls everywhere, run by both Han and Uyghur folks, that sell the usual meat kebabs and other dishes. I often patronize said places when hungry as the food is quite delicious and the people who make it very polite.

Also, there are some Uyghurs and Hui who eat pork and still consider themselves pious Muslims, though they're in the minority. Similarly, there were also many who belonged to the old Chinese Jewish ethnic group called 挑筋族 that ate pork (which is ironic seeing as how the name "挑筋族" is a direct reference to traditional Jewish dietary laws).
