Thank you for the suggestion! I do quite like the skin on braised chicken feet, though that's mainly because it's a good vehicle for the flavours of the sauce. Perhaps the dressing in 口水鷄 will soak into the skin and work the same way? I know I definitely don't like the skin of plain poached chicken with no sauce on — I've had it several times and it's just not my thing.
