Ha, yes, I love the Rasa Malaysia take on it :) I've seen similar suggestions for Thai curry pastes — unless you can get exactly the right ingredients, you're better off buying a really good pre-made one. I'll give Violet Oon's recipe a go, though, since it looks like I can get everything on there quite easily. Thanks!

I have Hainanese chicken rice on my list of things to post about once I have more experience of it. I've only had it once, and although I did like it, the people I was with said the chicken wasn't quite as tender as it should have been.
