I wonder if perhaps the "margins" (for want of a better word) are what define it. Wontons tend to have flaps of wrapper extending out from around the more tightly wrapped part that contains the filling, whereas other types of dumpling have most of the wrapper in close contact with the filling. Though perhaps I'm off base here!
