I think they may be my favourite type of noodle (though they have some close competition from cheung fun).

You might also like ants climbing a tree, which is normally made with pork mince, but I've managed to veganise it by substituting finely-chopped courgette instead, since I feel the pork is more for texture than for flavour in this case.
