Yes, I'm not sure they'd work sold fresh... I think the dried ones are fine though, especially if you get a good brand. Some of the lesser brands include flour or cornstarch, and I think suffer from it. Talking of lesser brands, I discovered this blatant knockoff of the Lóngkǒu 粉絲 packet in my local Vietnamese supermarket — kind of cheeky, I thought!
