kake

菇

菇 (gū) is the Chinese character for mushroom. It doesn't cover all types of fungi — for example, wood ears/tree ears/black fungus would be 木耳 (mù ěr, literally "wood ear") — but it does cover a number of species that are commonly used in Chinese food.

Here are some types of mushrooms you might see on a menu:

香菇	xiāng gū	Chinese black mushrooms (shiitake mushrooms, literally "fragrant mushrooms")
冬菇	dōng gū	another name for the above (literally "winter mushrooms")
花菇	huā gū	high-quality shiitake mushrooms (literally "flower mushrooms", referring to the crackled top pattern that appears on the good quality ones — photo)
北菇	běi gū	dried shiitake mushrooms
金菇	jīn gū	enoki mushrooms (literally "golden mushrooms")
金針菇	jīn zhēn gū	another name for the above (針/zhēn, which means "needle/pin", refers to their shape)
茶樹菇	chá shù gū	tea tree mushrooms

And here are some dishes with 菇 in the name:

茶樹菇炒臘肉	chá shù gū chǎo là ròu	stirfried tea tree mushrooms with Chinese ham
茶樹菇炒豬舌	chá shù gū chǎo zhū shé	stirfried tea tree mushrooms with pig's tongue
香菇雞飽仔	xiāng gū jī bǎo zi	steamed buns stuffed with chicken and shiitake mushrooms
臘味冬菇雞飯	là wèi dōng gū jī fàn	rice with preserved meat, chicken, and shiitake mushrooms
香菇帶子腸粉	xiāng gū dài zi cháng fěn	cheung fun with scallops and shiitake mushrooms
香菇雞絲粥	xiāng gū jī sī zhǒu	congee with shiitake mushrooms and shredded chicken
蠔油三菇	háo yóu sān gū	three types of mushroom in oyster sauce
